Super Spicy Chex Mix For The Super Bowl!

Super Bowl 2016 ~ February 7!

Guests will arrive at my door HUNGRY and ready to watch the game!!! To keep their hunger at bay until I serve my Super Supper I will have bowls of Super Spicy Chex Mix for easy grazing.  So easy, I make this mix in my slow cooker!

Makes 2 1/2 quarts

4 1/2 cups rice noodles (Rice noodles are sold in the grocery next to chow mein noodles. Do not use chow mein noodles for this recipe, the rice noodles are much more crisp.)

4 cups Rice Chex (I use the generic brand of rice chex for this recipe.)

1 can (9.5 ounces) salted cashews

1/2 cup butter, melted

2 tablespoons Hidden Valley Spicy Ranch salad/dressing/dip mix (dry mix)

In a 5 quart slow cooker combine rice noodles, rice chex and salted cashews. Stir to combine well.

Melt butter and add spicy ranch dip mix. Whisk to combine well. Pour the butter mixture over the rice chex mixture, using a rubber spatula to get all of the butter mixture out of the bowl and into the rice chex mixture. Stir to combine all ingredients, making sure that as much as possible of the rice chex mixture comes is coated with the butter mixture.

Cover and cook for 2 1/2 hours on low.  Stir every 30 minutes.  Serve at room temperature.

    Becky, this sounds really good, tasty and addictive! What I love, almost everything here is gluten free, it’s so hard to find snacks that I can have and this one sounds so delish. And the ability to make it in a crockpot? The absolute best!!!!
