Just in time for St. Patrick’s Day ~ this is a fabulous pairing ~ Guinness Ham Cheddar Cheese Croquettes with Horseradish Aoili and Guinness Blonde. Even if you are not a regular beer drinker, you will LOVE this pairing. To make this even more delightful, you and make the croquette batter today and fry them up tomorrow.


INGREDIENTS
6 russet potatoes, peeled and quartered
8 oz. sharp white cheddar cheese
8 oz. ham, diced
1/8 teaspoon turmeric (I did not have any turmeric on hand, so I omitted this ingredient.)
3 tablespoons chives, finely sliced
1/4 teaspoon cayenne pepper
1 tablespoon onion salt
4 egg yolks
2 tablespoons melted butter
4 eggs
1 cup milk
2 cups flour
4 cups panko breadcrumbs
Horseradish aioli:
2 cups mayonnaise
2 teaspoons garlic powder
2 tablespoons horseradish
1 tablespoon lemon juice
2 teaspoons of saltPREP TIME: 1COOKING TIME: 20 MINSSERVES 4-6
Place potatoes in a large pot and cover with cold, salted water. Simmer for 20 minutes until tender. Drain potatoes and mash while they are still hot. Add mashed potatoes to a bowl and stir in cheese, ham, turmeric, chives, cayenne pepper, onion salt, egg yolks and melted butter.
Using a pastry bag, create cylinder shaped croquettes about 1 inch in diameter and 3 inches long. (I used a small scoop to make my round croquettes.) Place croquettes on a parchment paper lined baking sheet and put in the freezer for a few minutes. Pour flour onto a flat surface and roll each chilled croquette to coat. Next, whisk eggs and milk together in a small bowl and dip the croquettes into the mixture.
Pour panko breadcrumbs onto a plate and roll the egg washed croquettes to cover. Deep-fry all of the croquettes at 325°F for approximately 3–4 minutes until golden brown. Serve immediately.
Horseradish Aioli:
Combine all ingredients in a bowl, mix well and enjoy.
