I love bubbly cocktails and Prosecco adds the best bit of fizz to our favorite libations. I’ve been enjoying Mionetto Prosecco and recently discovered their IL Prosecco DOC. Perfect for concocting cocktails because it is crisp, dry and bubbly but doesn’t break the bank in the $10-$12 range. Available on-line or locally – Mr. Bill’s Wine Cellar, special order.
The products in the “il” line have been designed with a younger, more original image for light, informal, social drinking. The nature of this unique product is reflected in the distinctive design of the bottle and the name, which sets it apart from all Mionetto’s other ranges – simple, direct, striking – and in the clear-cut, eye-catching graphics.
This sparkling Prosecco is distinguished by a rich array of fragrances that include acacia blossoms, honey, and apricot. The palate is soft and smooth, yet at the same time crisp and dry.
I am looking forward to summer cocktails! Today I made fresh Mango Bellinis:
Fresh Mango Bellini
Mango Puree:
1/2 cup sugar
1/2 cup water
2 fresh mangos, peeled and pitted, cut into chunks
Place sugar and water in a saucepan and bring to a boil. Reduce heat to simmer and add mango chunks. Simmer over medium-low heat until mangos are soft, about 5 – 7 minutes. Remove from heat and allow to cool. Place mango in blender and blend until smooth. Place in a bowl, cover and refrigerate until ready to serve.
Mango Bellinis
For each Bellini: Place 2 tablespoons chilled mango puree in a champagne flute. Fill flute with chilled Mionetto IL Prosecco. Gently stir cocktail and garnish with a fresh mint sprig and a slice of fresh mango on top.
