
Welcome warm weather… sipping delicious bubbly while dining alfresco on our patio, evenings under the stars celebrating good food and friendship…welcome Spring! Another reason to celebrate… I have new friends at Mionetto that sent me several bottles of their Italian sparkling wines to taste. One of the bottles of bubbly was completely new to me: Prestige Extra Dry Rosé. After tasting this delightful bubbly (at a delightful price point too $17 per bottle – available at Mr. Bill’s Wine Cellar locally, just ask him and he will get it in for you). I plan to keep a bottle or two in the fridge ready to pop for any occasion.
I love the idea of tea sandwiches as a pairing with bubbly wine so I immediately thought of pairing the rosé with Italian tea sandwiches ~ “tremazzini” ~ triangular Italian sandwiches constructed from two slices of soft white bread, with the crusts removed. Thinly sliced cold roast beef with a light horseradish sauce garnished with arugula is a lovely pairing with rosé and I was delighted that this pairing was so delicious. The pepperiness of the arugula was delightful with the zing of the horseradish. I found seasoned Boar’s Head roast beef at our local Kroger grocery, very lean, perfect for these little sandwiches.

To assemble sandwiches: Cut crust off of 12 slices Pepperidge Farm very thin white bread. Spread each slice of bread with horseradish sauce. Layer very thin slices Boars Head seasoned roast beef on 6 slices of the bread. Sprinkle with grated parmesan cheese. Top with arugula and thin cherry tomato slices.
To make the horseradish sauce (enough for 6 – 8 sandwiches): Mix 1 tablespoon mayonnaise, 1 tablespoon Dijon mustard, 1/2 tablespoon prepared horseradish, 1 tablespoon sour cream in a small bowl. Cover bowl and refrigerate until service.

Prestige Extra Dry Rosé
The Prestige Extra Dry Rosé is perfect for sippin’ and sharing with friends. Raspberry, morello cherry and wild strawberry flavors. I enjoyed serving fresh strawberries with the tremazzini – just the perfect little impromptu picnic for me and my friends.
