We visited the Parés Baltà winery in 2018 and always look forward to when they host wine tastings in our local wine shops.
During their most recent visit I purchased several Parés Baltà wines: (These wines are available on-line and locally at Wine Gourmet.)
Indigena made from 100% Grenache. This wine was new to me. Whenever I am tasting a wine for the first time, I like to find a food pairing to enjoy it with. I paired Indigena with 1 Year Aged Manchego cheese. The texture of this cheese reminds me of Parmesan. It hails from the Southern Spanish plains of Casilla La Mancha, where it develops intense nuttiness and a long, fruity finish after about a year of aging. Indigena is a rich and intense wine so it needed a cheese that could stand up to the bright red fruit, exotic spice and smokey oak notes in the wine. Delicioso!
The Parés Baltà b Brut Cava is made with the traditional method, an aging system similar to that of “Methode Champenoise” which is used when making champagne. $18 range. Blend of 62% Parellada, 22% Macabeu, 16% Xarel·lo grapes. Creamy and elegant, with a bright mineral finish. Notes of fresh green apple with a hint of almond. Crisp and refreshing. One of my favorite Cavas!
Ros de Pacs ~ a lovely rosé blend of 66% Grenache, 26% Syrah & 8% Cabernet Sauvignon. Fresh, soft, aromatic, juicy red summer fruit flavors. $14 range. Perfect for ” Rosé Season” (Spring and Summer OR all year long depending on who you ask!)
Close to the sky, on the top of the highest Penedes mountains, is where the freshest and most perfumed grapes of Xarel·lo and Sauvignon Blanc are grown. 85% Xarel·lo, 15% Sauvignon Blanc. Cosmic has a beautiful pale yellow color, aroma of flowers and white fruit with a citric and mineral reminiscence. Fresh and smooth, full of nuances. Good acidity and long finish. $24 range.
